In the beginner class, we focus on the design aspects of the knife, its usability, and craftsmanship, introducing basic tools and techniques. In the advanced class, we emphasize performance and advanced techniques, using higher-level machinery and learning more sophisticated methods.

We recommend starting with the beginner class to ensure a solid foundation. The advanced class builds on these basic skills, so having that prior knowledge will help you get the most out of the experience. If you have previous experience, please contact us to discuss your qualifications and see if direct entry into the advanced class is possible.

The chef knife class requires intricate design and complex grinding skills. We recommend completing both the beginner and advanced classes first to ensure you have the necessary skills. If you already have knife-making experience, you can provide samples of your previous work for evaluation. If your skills meet our standards, you may be eligible to join the chef knife class.
